Kerstin - The turkey and cheese sound yummy! I am not too saavy about carb counting but how about these ideas: cottage cheese & sliced tomato, (cold or hot) braised firm tofu, shrimp cocktail, 3 bean salad, tuna with lemon juice. A good way to get extra protein and calcium is reduced fat 2% cheese, I like Kraft. For about 70-80 calories, you get 1/4 C cheese, 40% of your RDA of calcium, and 7g protein w/ only 1g of carbohydrate. I add it to sandwiches, wraps, chili, seasoned chicken breast, spaghetti, everything. Veggie burgers are a good source of protein, and most of their carbs usually come from fiber. I like the Morningstar Farms Garden Veggie patty with 1/8 C 2% cheese and a little bbq sauce. Tastes like barbeque! If you're eating out, I like fajitas without the tortillas. I just dip the beef or chicken and sauteed veggies right into the salsa and add a little sour cream if I want.
Hi- My brother has been on Atkins for a while now, and he seems to like tuna salad made with tuna, boiled egg, mayo, & minced peppers(green, red, or yellow). He spreads it on cucumber slices in place of crackers. He loves it! Also, you can make chicken salad the same way. Very few carbs-lots of flavor. I like to add a little squeeze of lemon, or better yet, some Mrs. Dash. He also likes whole green peppers stuffed with lean ground beef (or ground turkey) and a few onions, then broiled until pepper is cooked through. Very tasty, and you get a good amount of protein as well as variety from the basic meat, cheese, and eggs. Hope that helps! Heather
A few idea that might help you think outside the box:
Lettuce wraps - just about anything you can put in a sandwich(or taco/burrito) can work in lettuce wraps. I make "tacos" all the time -- extra lean ground beef (or turkey), low fat cheese, low fat sour cream and salsa. Lettuce gives you a bit of crunch, but NO calories. Anything you like on a sandwich - use lettuce instead of the bread. Tuna salad, chicken salad, you name it. Lettuce wraps are an appetizer in some chinese restaurants. You can really work up a lot of ideas for lettuce wraps.
It's awesome because dropping the bread dropped a lot of calories. Even "lite" bread has 80 calories for 2 slices. That is 80 calories gone, or you can treat yourself to a small treat.
I was never a carb addict, but I can say that being more conscious of carbs, and eating carbs more moderately helped me a lot. For most things, if I can find a "low carb" option, I will usually look into it. I did buy low carb torillas -- another wonderful product! Low calorie (about 80 calories), whole wheat, 12 grains of protein, and fiber. But those little buggers can sort of be expensive. But I do love them, I make wraps for breakfast (filled with eggbeaters, and low fat cheese), or sandwich wraps for lunch.
Beans are a great source of protein, but they are rich in carbs, but it is good carbs. Don't over use because beans can be high in calories. Watch the serving size. Add black beans to salads, or garbanzo beans. Even add beans to soups.
Low fat cottage cheese is a great source of protein. Low fat yogart, but watch the sugar! I usually buy the brand that is made with Splenda. Eggbeaters are a great source of protein, low calorie, and no cholestrol. Check out their website for recipe ideas: quiche, etc. Some of their recipes need to be motified to be low calorie. I always buy the store brand because Eggebeaters can be pricey.
Check out things like turkey bacon, or sausages for breakfast. Or turkey bacon for a BLT.
Nuts make a good snack and have good protein - watch serving size! I love almonds. And nuts tend to stick with you. Turkey jerky is high in protein as a snack, and low calorie, but watch the sodium. This is a good "hold me over" snack. It holds me over until I can sit down for a decent meal.
Chili made with lean meats and beans is a bowl of protein, and very, very filling. Top with low fat cheese or low fat sour cream.
You can also check out vegetarian products -- they tend to be higher in carbs because they are usually made with soy or grains, but they are very healthy and tend to be a good source of protein.
Peanut Butter is also good for protein. I like it on toast at breakfast. Read the label a lot of peanut butter is loaded with sugar.
Always look at labels -- watch calories. Lots of low fat, or low carb products are high in calories. I try to find the right balance of benefit (low fat/low carb) to calories because in the end (for me anyway) it is really about calories. Low carb tends to be more low calorie, but higher in fat content. Different things work for different people.
You can always boil up a bunch of eggs and the start of the week. They should keep for 2-3 days and are always handy. Low fat string cheese is good. celery stuffed with low fat cream cheese. soy nuts. sharla
