easy meal suggestions???

As many of you may remember we are moving out of state in 2 weeks. Actually the movers are coming in 2 weeks, but we will not have any furniture etc for a week. Then when we get to NC our house won't be ready for another month so that means that we will be living in a hotel for a month. It has a stove, microwave , and fridge and a few pots and pans. I don't want to gain all the weight that I have lost so I am trying to coming up with a plan. I need really easy meals top throw together during our transition. Any suggestions?

Sharla, time is flying! I love these kind of questions! Here is my list of ideas. Cold stuff: 3 bean salad, whole grain bagel sandwiches, hard boil eggs, greek salad, taco salad (use packaged veggies), gazpacho, and shrimp salad/cocktail. Salmon cooks well in a microwave and you can use it hot or cold. Stove top meals: pasta with tomato&veggie sauce, lowfat tuna noodle casserole, veggie chili, stir fry, omelets, and lowfat sloppy joes. Microwave dishes: Nachos and baked potatoes/yams. I look forward to other people's ideas. Now get back to packing! LK

thanks for your suggestions. I love Salmon, but have always been afraid to cook it. How do you do it in the microwave. I would love to try it. BTW , how is your house coming along? sharla

Season fish with lemon juice or marinade or whatever you like. Wrap fish in wax paper (or you can use a covered glass dish) and microwave 3-4 minutes for a fillet or 5-6 min. for a steak. Let stand 2-3 minutes to finish cooking. Enjoy!

The house plans are being finalized and they should be ready next Thursday. Yeah! Then, we are off to the black hole of the planning department for permits. That takes 2-4 months in our area. Unbelievable! Thanks for asking:-)

Along the salad theme, I like to buy the light ceasar salad kits, prepared chicken strips (hillshire farms or oscar meyer) and tortilla's and have chicken ceasar salad wraps. You could also put it in a whole wheat pita.
