Really good recipe--Ice cream substitute

Just wanted to share this recipe I came up with this weekend for a really good, low cal ice cream substitute. It's actually more like a sherbet, but it's still really yummy and could be made with other stuff, too.
4 C frozen raspberries
3 C skim milk
2 small or 1 large box sugar free raspberry gelatin
small amount of very hot/boiling water
Puree the raspberries in a food processor.
In a medium glass bowl, dissolve the gelatin mixture using just enough hot water to completely dissolve (I used about 1/2 - 3/4 C). Slowly whisk in the milk.
Turn the food processor back on, and slowly add the milk/gelatin mixture. Puree until completely incorporated. Scrape the sides to make sure it is fully mixed.
Pour the mixture into 4 separate single serve containers (I used the Ziplock twist and seal containers in small, 2 C--just perfect sized). Let freeze completely. Note, it will be frozen fairly hard, so it's best to let it sit for a while, and that's why it's best to put it directly into the separate containers.
Here's the information on this:
Makes 4 servings at 2 cups apiece.
Only 150 calories per serving.
It has 9 grams of fiber per serving!
Counts as 2 servings of fruit and 1 serving of dairy (over 20% RDA for calcium).
The best thing is that this takes about half an hour to 45 minutes to eat the whole thing, if you can. It makes a great snack to eat in front of the TV at night or after dinner to keep the munchies at bay.
If you want, you can also divide it into 8 servings of 1 C apiece for only 75 calories and 4.5 grams of fiber, no fat, and 1 Weight Watchers point. Plus it counts as a serving of fruit.
You could also make this recipe with frozen strawberries, peaches, etc. instead of raspberries. You would need to use about 6 C strawberries or peaches, though, since they don't measure quite the same as raspberries. I think next time I am going to puree peaches but still use the raspberry gelatin to make a raspberry peach mixture.
It's also really good if you let the 2 C thaw a bit, put it in a blender with a cup of milk and make a "milkshake". Yummy! and only 250 calories for a 3 C milkshake--can't get that at McDonald's.
Just wanted to share because I know there are a bunch of people out there watching their calories and monitoring fruit and dairy intake.
Anyone else have any low calorie homemade treats that they want to share?
