Anyone else care to join me in a little adventure? :)
I am an extremely picky eater and am bad about saying I don't like something without really ever giving it a chance. So, I have decided that I am going to try one *new* healthy food per week. Anyone else want to give it a go?
This week I had salmon. Yes, I've tried it before, but never really gave it a chance because it's fish and I *hate* fish. Or that's what I thought. I didn't like fish when I was younger, but my taste buds have evolved so much as I've grown, yet I never gave fish another chance. So I grilled ginger teriyaki salmon last night and it was pretty good. I don't know if I can add it super regularly, but maybe once every week or two and work my way up to once to twice weekly?
Next week I think I'm going to try eggplant. What will YOU try?

I would love to join you but I love all kinds of healthy food already! I have been a healthy eater even though overweight. Of course I have eaten my share of junk food as well, so that's where I need to curb my choices. I am enjoying all the summer veggies and a little fruit every day. I made a wonderful chicken soup the children gobbled up. It had parsnips in it, tiny carrots, barley, with a rich chickeny broth made with chicken celery onions etc also . The parsnips added an interesting sweetness and flavor. I think you are right on track to learn to like those good for you things because they will give us the energy we need while the junk only saps us.

Sounds very interesting. I will join you! I think the trick for me is to find appealing recipes/cooking methods.

Well, I think I'll slice it about 1/4" thick and then I might grill it and then make kind of like an eggplant parmesan "pizza". Instead of breading and frying the eggplant and then baking it with cheese, I think I'll just top it with some tomato sauce and Italian cheese and then a few turkey pepperonis and let it cook up on the grill. I think that'll taste good and be very low in calories that way.
Good luck on the red cabbage. It comes in the Olive Garden salad every time I get it and that is one vegetable that I still cannot stomach. I do eat sauerkraut though, which is very good for you, too, so go figure :).
