So at lunch today I found myself once again at the cafeteria here at work staring at the same greasy food. So I was wondering if anyone had any good lunch ideas. We have a little fridge in the office as well as a microwave so I could easily bring things in.. I'm just drawing a blank as for ideas. Could be just because I'm not hungry at the moment lol. But I figured I'd see if anyone here had any delicious lunch ideas that would be healthier than the junk at the cafeteria :)

I very often bring a salad with my premeasured protein, a 1 point bagel, a fruit OR left over from dinner which could be chicken and veggies OR on rare occasion a Lean Cuisine or Smart one frozen lunch. You can bring a boca burger and micro it with salsa and lettuce and tomato and cuke spears to nibble with it. OR peanut butter on a 1 point bread with 1/2 banana.

does your cafe have a salad bar. that is what i have when i have time to run over for lunch. Just be careful what you choose.

Yea they have a salad bar. But its generally not that great.. There's a nice selection but the quality of the veggies just isn't that great so even tho I generally try to go for that I'd prefer not to. Plus its not very cheap, not expensive but seeing as both DH and I currently eat there almost everyday it definitely shows in the budget lol.

Leftovers is a good idea. I could handle that. Means I gotta start cooking more tho lol but that wouldn't be a bad thing. Can't wait for the days when I don't have to work anymore :)

when you make dinner, its really not extra effort to make 2 or 3 pieces of chicken. you can always make extra salad and or veggies. just don't put dressing on until you are ready to eat it.

yes buying can get costly and i usually bring my lunch. it takes a little extra planning but well worth the end result

Healthy Choice has some great soups that you could nuke if the office has a microwave. My sister told me that the South Beach Diet sandwich wrap kits are pretty good for a quick lunch, too. You could also buy containers of pre-cut fruit and/or veggies to take as a side to a sandwich or a snack. On other boards I've heard people mention having a protein bar and a slim-fast drink for lunch at work because its quick and filling.

Sue gave you some great tips for lunches. I agree, it does take just a bit of extra planning but well worth the end result! Not only to your pocketbook but your waistline! Also, I always find leftovers to be alot more tasty the next day, so I enjoy it all the more! Good luck with this I know it can be a hassle but I know you will appreciate your results.

I usually take a Bowl Appetit by betty crocker or a Simly Asia noodle bowl and some sort of veggie like a salad, green beans, broccoli, ect.

I really like making pasta salads because they are cheap and you can vary them so much. Unlike green salads they don't get wilted and actually get better if they sit in the fridge for some extra time. It's a great way of using up stray leftovers too, especially cooked and raw veggies or a small portion of meat or fish. You can go Italian with a vinaigrette dressing or Asian with a ginger-sesame one. It feels like a real meal and yet you don't have to wait for the microwave. Good luck. Annie

Staci- you are awesome. I'm gonna have to check out your journals too. Never thought about freezing foods, I really like this idea. Do most foods freeze well or are there some that don't do so well? I eat 3 meals and 2-3 little snacks a day for the most part. I eat just about every 3 hours, it works better for me cuz I'm more of a snacker than a huge meal type person.
