Well if your going to be in Salt Lake I would suggest going to see temple square, I don't know how you feel about the religion part, but it's really pretty. If you don't want to hear about the about the religion just say you aren't interested and walk away, they usually aren't to pushy and are nice. (email me if you want more info...)
If you like amusement parks you can go north of SL a little ways and go to Lagoon. www.lagoonpark.com

Which part of Southern Utah......I'm curious......as I grew up in Utah, and was in southern Utah last month.
Remember to have lots of water, and watch for catus. AND LOTS OF SUNSCREEN!

It sounds like you are planning on going to Bryce and Zions, if you get a chance you could also hit Capitol Reef
