Okay so I am just trying to figure out what would be a quick, easy and healthy meal for lunch and for dinner?? Any ideas??

I am big right now on buying lean cuisene meals for a quick meal when I am short on time. The only thing I do is add a little extra veggies like carrot stix or whatever your favorite veggie is. I do this probably twice a week.

The only other thing I do is sit down on a saturday and plan my meals for the week and then cook up a storm and freeze whats cooked before Monday comes!!! For example today was taco salad day for lunch. I simply pulled out the 4 oz's of turkey burger that I was precooked and preseasoned with some taco seasoning and zapped it in the microwave then added bout 16 baked wheat tortilla chips some lettuce tomatoe and lowfat cheese and some salsa and tada......taco salad in a jiffy!!!!!

I've also started buying boca burgers and they are done in the microwave in a little over a minute place that in a whole wheat bun and add your favorite toppings and bam.....a burger just add some veggies on the side and some fruit..... Dinners I'm not so good at I actually start cooking about an hour before my DH gets home from work anything from chicken breasts to salmon....my favorite new thing thou is making the things on the grill since its so nice out and if you have leftovers then you have a great lunch also. I hope I was able to help a little.

I always keep whole wheat pita bread, lean lunch meat, mixed baby greens, low fat dressings and sauces and cheese on hand.

I'm a chicken breast person. You can never go wrong with a chicken breast with a little Mrs. Dash on it and some veggies. That's quick and easy.

I have this INCREDIBLE cookbook called "light n easy" and seriously, it is the best. The ingredients are pricy, but what I always do is I walk to the grocery store and pick up what I need and then do it again the next day. I save money because I don't buy extra because I can't carry too much home and I get a little extra workout and fresh fruits and veggies.

I always keep plenty of salad, tomatoes, deli and frozen cooked shrimp on hand for a quick salad.

also I always have frozen veggies in freezer as well as boca burgers and ff hot dogs, all can be microwaved and put together quickly, top with salsa and a little cheese. I also have cheese wrapped in 1 point servings in the freezer.
