Welcome! Unfortunately, I'm not familiar with meat and kidney issues, that would be a challenge. Is it fish and eggs too?
I think one of the hardest things to do that can have an impact on your health is exercise (with your docs OK). I started with a goal of 15 minutes a day, 3 days a week and once I got that down increased it. That and A LOT of water!
