What are you eating today? Are you putting healthy things in or harmful things?

Me:

Too many cups of coffee (seems to be an issue)

1 egg & 1 egg white, scrambled with a thin slice of Havarti melted on top

Glass of choc soy

Water

Think Healthy...look at harmful food as a toxin.

Sure, I have another recipe for it somewhere, but can't seem to find it. The one I've been currently using is from "The South Beach Diet" from their poached salmon recipe, which is my favorite way to eat salmon. In fact, that used to be the only way I'd eat it.

Cucumber Dill Sauce

1/3 c. peeled, seeded, finely chopped cucumber

1/3 c. fat-free sour cream

1/3 c. fat-free plain yogurt

2 teaspoons chopped fresh dillweed

1 teaspoon Dijon mustard

Fresh Dillweed springs (optional)

In a medium bowl, mix together the cucumber, sour cream, yogurt, dillweed, and mustard. To serve, place the salmon fillets on individual serving plates. Spoon the sauce evenly over the fillets. Garnish with fresh dillweed sprigs, if using. Serves 6

Not worth a darn. No, I'm not going to list my menu here. It's bad enough seeing it in my journal.

Add one low-fat cheese stick and a small bowl of Alphabets pasta with a little Take Control and parmesan cheese. Comfort food - my stomach has settled down a little; the Alphabets always worked when I was little and had an upset stomach.

I've had a can of Pepsi caffeine free sitting open on the counter since I got home around noon; going to drink a glass now.

Well, I lucked out & found Scampi Alla Palermo at Joe's Authentic Italian Food. It was quite good & I left half of it, the salad & bread (my weakness) for tomorrow's lunch. Tonite, I better just eat veggies & chicken or fish!

I've had a good eating day. I really didn't stray too much from my diet on vacation. Just had a couple of wine coolers and cocktails. Got back on the scales and I'm back down to where I was before vacation. Now....time to keep heading down on the scales.

Did some healthy shopping to try to keep myself from straying too badly. My afternoon snack was some fat-free honey almond flavor yogurt.

Looks as though I'll be poaching the salmon, after all, since Tim is working late. That way it won't be dry when he gets home. I've got the sauce made and the fruit salad and added some raspberries to that. Yum!

Not a bad eating day

Breakfast-Special K with a few Honey Nut Chex thrown in with a banana & blueberries, coffee and OJ

Mid morning-Strawberry banana Lite N fit yogart

Lunch-tuna salad on a whole wheat pita

Mid afternoon-1 Reese's peanut butter cup & an apple with a tablespoon of peanut butter

Dinner-2 chicken fajitas

Well, no dinner tonight. I contracted ds' horrible sore throat & just can't bring myself to try to swallow. Ugh! Poor ds is still quite sick with his crud & has lost his voice. Oh well, at least I have part of next week off for my birthday & I can recoup then. Well, it's off to bed I go with my sore throat & cold medicine & Lord of the Rings movie.
