Is it better to break up the upper body workout into two days, when I feel like I get a better workout because I'm not so fatigued by the end of the workout, or better to do all upper body on one day and go for that fatigued feeling, knowing I've really worked it all good?

If you want to break up the UB routine, break it up in a push/pull routine. Pushing exercises would be chest, shoulder, triceps. Pull exercises are all back and biceps. This is a good way to go if you want to break up your weight training routines over 6 days. Push on Monday, Pull on Tuesday, LB on Wednesday and...repeat. Then you would take Sunday, or whatever day off you have decided on.
