I don't think I'll be making up one of those Super Salads, but I liked the idea of putting beans in a salad as a switch from tuna. I'd bought a one-pound pack each of beans and black-eyed peas a while back, but hadn't gotten around to preparing them. I cooked up the peas yesterday with the idea that I'd add them to a salad for today's lunch. One pound o' peas, when cooked can take up some fridge space! I have a feeling I'll be the only one eating them, and it's going to take me two weeks to do it.

I think when I make the beans... I'll start with a half-pack!

Sounds like my first adventure making a batch of chili from scratch - including cooking the dried beans. DH and I like meaty chili, not bean-y chili. That batch seemed to last forever - took up a lot of room in a freezer that wasn't too big to begin with. We ended up giving quite a bit away.

I've learned since that, based on the amount of meat to be cooked, two or three 16-oz cans of beans, rinsed thoroughly, do a fine job. They're too mushy for salad, though.

Happy bean-eating! Maybe Allison will have a new favorite food to talk about soon?

Gosh, I saw the 1st part of your post & thought, "What have I done now???" LOL! I've never had tons of beans before. Will they freeze, so you could reuse in them in something else? How do you feel about chili with your salad? Hope you can find a good use for them. How did your salad turn out?
