Here's a link for 1 pot meals. We talked about crock pot cooking a little in chat last night. I haven't read these so I'm not sure if they are crock pot but, its the same idea with everything in one pot. To me that's saying cold weather meals and less preparation :-)

Thanks Phyllis! Checked out a few of them some of them in the crock pot and some just fast and easy-which is sure helpful to me to try to get dinner on the table in an hour or less!

Last year I dug up my crockpot. This year I might actually use it for something. I love the sound of some of those recipes. But some of those fat grams - wow! Some ingredient substitutions might be in order.

Even though it's the worst possible fatty cut of meat there is, I still cannot imagine a New England Boiled dinner without fresh pork shoulder and WITH tofu instead. Reminds me of the Everybody Loves Raymond episode with to-furkey for Thanksgiving.....

Phyllis thanks for the link. With school starting on the 22nd I will need all the help I can. I will add this to my favorites and check it out tomorrow or Saturday when I have more quiet time.

ROFL with the Tofu stuff. I have never tried it and honestly have no desire to. About the crock pot and the calories, well you are right. But if we keep it to once or twice a week can it really be that bad? I mean look how many parents are raising their kids on chicken nuggets, and hot dogs because they are so busy. Heck many of Katie's friends do not even know what a real chicken sitting on a dinner table looks like(sorry Patty). I would rather have a pot roast with gravey and potatoes any day.

Absolutely agree on using these recipes one or two nights a week and how it's still healthier than the fast-food diet so many kids live on, or doing takeout too often. I really need to use my crockpot, especially on nights where I'm doing a long workout. Getting home late, a 90-120 min workout, feeling exhausted anyway, and cooking a meal leads to eating too late and/or takeout - neither of which is good.

Maybe the fat gram issue isn't really an issue - but the tofu is!

I think a lightbulb went on in my head....Thanks!
