Quick and easy Southwestern Salad!

I made this salad Friday night instead of doing our usual take out or frozen pizza (Friday nights have always been a bit celebratory around here). It was a hit with The Cus and I, a meal on it's own with a serving of bread on the side. There wasn't any nutritional info on the recipe, but it's got to be better than the usual Friday night fare we have here!

Southwestern Salad

10 oz bag of salad greens

1 can corn, drained

1 can black beans, drained

1/2 cup ranch dressing (I used Lite)

1/2 cup picante sauce

1 to 1-1/2 cups broken tortilla chips

1/2 cup diced tomato

Shredded cheese

Open the bag of salad greens and place in bowl. Mix the corn and beans in a small bowl, and spoon on top of greens. Mix ranch dressing and picante sauce and pour over vegetables. Top with tortilla chips and diced tomato, sprinkle with shredded cheese.

This reminds me a lot of what my brother makes for a snack. It's called "Cowboy Caviar."

He mixes hominy, black beans, corn, garbanzo beans (or any combination of beans you want to put together) and then mixes in a small container of Italian dressing. You just let it flavor for an hour or 2 and then serve with tortilla chips to dip with. Its really pretty good.

That sounds really good. I'll have to try it! I love beans any way, shape or form. They don't always like me really well, though. Nancy

I forgot one important thing...picante sauce. Maybe I better just ask him for the whole recipe...lol. I might have it all wrong.
