Had a great lunch with my sister today.We went to a place that has homemade desserts.I was a good girl and did not order any.My sister had to get back to work and ordered a slice of peanutbutter pie to go.They brought it to eat there.What could I do???I had to help her eat it.It was so good!!I've never had that before.It had whipped cream on top and was drizzled with chocolate.As if I don't already love enough kinds of pie.

1 cup 10X sugar
3 eggs, separated
2/3 cup sugar
1/8 teaspoon salt
1/2 cup peanut butter
1/4 cup cornstarch
2 cups milk, scalded
2 Tbsp. butter
1/2 teaspoon vanilla
9" pie shell, baked according to directions for custard pies
1/4 teaspoon cream of tartar
Blend together 10X sugar and peanut butter until it is a coarse crumbly mixture in a medium bowl. In a separate bowl, beat egg yolks until fluffy. Combine sugar, salt, & cornstarch. Beat into egg yolks. Beat in hot milk gradually. Cook over hot water until thick and smooth, stirring constantly (I just use a saucepan and stir it constantly). Remove from heat. Add butter and vanilla to egg yolk mixture. Cover bottom of pie shell with 2/3 of peanut butter mix. Pour in the custard. In a small bowl, beat egg whites and cream of tartar until stiff. Spread on top of filling from outer edges to center to prevent weeping. Sprinkle remaining peanut butter mix on top of meringue. Bake 12-15 minutes at 350 degrees. Refrigerate well. Serve.
