"Winter squash are not just sweet tasting, but also exceptionally nourishing: A cup of "Acorn" squash, for example, is low in calories (137), high in fiber (11 grams), and has one-fourth or more of the daily requirements of magnesium, iron, vitamin C, vitamin B6, thiamine, and iron (repeat of iron in article - not my typo). Winter squash are high in beta-carotene and related substances, as well as potassium, and are one of very few low-fat sources of vitamin E."
Sounds like good stuff (until we add all the other stuff that actually gives it a great flavor) - although I have to wonder about the authority of a magazine where a proofreader fell asleep on the job or didn't use spell-check or grammar-check....
