Thanksgiving Calculator!

I was looking up a recipe for pumpkin cheesecake on iVillage after checking my email from them on Thanksgiving menus, and I noticed this calculator. Based on what I ate last year, I calculated my holiday meal to 1600+ calories!!! Oh well, it's only 1 meal on 1 day of the year.

This year I'm preparing dinner. I'm planning on cooking traditionally (just not indulging in too much stuffing or in white potatoes or other bread in any way, shape or form). But, the good part about having company is sending leftovers home with them in doggy bags. DH and I aren't stuck with terminal turkey and trimmings, and our guests won't need to cook for one or two nights.
Question for everyone - other than the bird and stuffing (or dressing), what's the one single thing you cannot do without for Thanksgiving dinner? For me, it's candied yams or sweet potatoes.

I live for stuffing/dressing/cranberry sauce, though. I won't eat bread & barely have any potatoes, but I will have more than 1 serving of the stuffing group of foods. It's a good thing it isn't available for me throughout the year! I'd be in BIG trouble! I love leftovers, but will take the majority of them to our local soup kitchen.
Tim was just saying last night that he'd like us to get one of the Harry and David Pumpkin Pie Cheesecakes to have for Christmas Eve/Christmas dinner. They look wonderful. See a picture and details at the link below:

They had some delicious cheese tortas at the store, but I don't see them on line. I'd like to get some of those for Christmas Eve too.

Here's a great recipe for a change on sweet potatoes
Sweet Potato Souffle
1 1/2 c. mashed sweet potatoes
6 T. sugar
1 egg
4 T butter
1/2 c. milk
1/2 t. nutmeg
1/2 t. cinnamon
Mix and bake at 400 degrees for 20 minutes
Topping
3/4 c. corn flakes
1/2 c. chopped nuts
1/2 c. brown sugar
1/2 stick butter
Mix and put on top on souffle.
