Everything is set for my luncheon tomorrow, I have 4 casseroles made, a fruited ice ring for the punch (how retro, huh!), a gorgonzola artichoke dip, I have brie with a chipotle pepper jelly topping (theme is Mexican food for the holidays), two friends are bringing Christmas salads, my other friend is baking her carrot cake and making a Southwestern corn pudding, and she's making a Kalua cake too, another is bringing homemade Christmas cookies..oh..and another is bringing her black bean salsa.

I have three dining tables set using every piece of my holiday china, Lenox tumblers, and pretty wine glasses with Christmas wine tags (I have several bottles of sparkling cider to offer)...and Eric and Bryan are wondering just where they can sit.

Sounds as though you're well prepared for a lovely and tasty luncheon!! Your ice ring description brought back memories of one I used to do in a Jell-O ring shape mold -- I'd cut slices of citrus and arrange with maraschino cherries and freeze it in ginger ale.

I love Brie (and most other cheese). We're going to do a couple of cheese tortas and baked Brie en Croute with cranberries, apricots, hazelnuts, and brandy along with a lot of other stuff for Christmas Eve. They can also be our appetizers on Christmas Day. I am craving the Brie just thinking about it.

We'll look forward to hearing how your luncheon goes.

Oh..this recipe calls for 7 up at the end...so I could've done it with 7up, never tried that.

Last year I made a raspberry and almond Brie en croute. THIS year I'm doing it the easy way and bought one by Ile de France from the gourmet cheese section of the grocery store. It says it is a "genuine French gourmet recipe," but all I have do is warm it up! :-)

I thought of you today when we were at Harry and David's. I got a Key Lime and cranberries in cream cheese torta and a Gorgonzola, sun dried tomatoes, and pesto in cream cheese with parmesan, romano, & roquefort mixed torta. Also, got some of their peach salsa with is absolutely delicious over cream cheese and on Doritos or other nacho style chips.
