Need vegetable ideas

I am trying hard to get more vegetables eaten and I'm so tired of corn, beans, peas and mixed vegetables.

Good morning, Nancy!

Roasted veggies are delicious. Not a lot of technique involved, just a lot of cutting. Red and yellow peppers (green if you like them - they might bother your tummy, like me), asparagus, eggplant, zucchini and summer squash, acorn squash (pain in the neck to cut up raw), onions, parsnips, carrots - like I said, lots of cutting into cubes or quarters. Any combo of these is yummy.

Spray a roasting pan with olive oil spray - I use my big turkey pan and make a batch for leftovers. Spread the veggies out, add a few cloves of garlic that you've crushed, and drizzle a bit of olive oil over the veggies. Mix lightly so the oil coats most of them, put them in a 350 degree oven for about 30 minutes or until a fork goes through them easily, salt and pepper to taste, and serve.

Now you've got me - going to roast a big panful tomorrow at gametime for the week.

SBD got me on the roasted veggies kick. They really are good. I got so I went lighter on the peppers and squash and heavier on the asparagus, onions, garlic, and tomotoes after a while. They're also good with some grated cheese nekted over them. I sprinkle salt and pepper over mine too. We also love asparagus roasted by itself either on the grill or in the oven. We do steamed broccoli florets regularly and green beans pretty often. I also put chopped broccoli and chopped spinach in vegetable soup to get more greens in there.
