I think you're a brave woman if you spread that stuff on a cracker. LOL Thanks for these recipes. The other night I simply melted a little over some green beans and it was just fine. I just found out it does need to be unrefined though, so I am thinking about ordering the one from Mercola's site to make sure I am taking the right kind.

Hi Rhonda,

I LOVE coconut oil and most of the time I just put it on what ever veggies or protein I cooked. It's also really, really good spread on a low carb tortilla with a little Splenda (if you're using Splenda) or if you like Ezekial bread, spread it on after you toast a slice of it.

Like Jeepster said, we just discoverd that the one we are using may NOT be the best kind. So I went to Tropical Traditions instead of Mercola's site and orders a gallon. If you get that size there is now shipping and it's not quite as expensive per ounce.

Thanks for the tips! Have you ever tried mixing it with peanut butter? I was wondering what that might taste like.

I have not tried that but knowing me I would probably like it. My fav is cashew butter, tho. WHAT a treat!!!

Love cashews, so I'm sure I'd love the butter too! I got used to soy nut butter after eating it for a while. It was from the health food store, so it's not as sweet as the stuff I'm used to from the grocery store.

Today I mixed 1/2 coconut oil and 1/2 peanut butter and spread it on some dark, whole grain toast. I thought it was very good!

I will have to try that soon but I am staying away from grains right now as much as possible because I am still trying to get leaner in my legs.

Sure beats when I decided to see if I'd like "coconut tea." It was a bit greasy to drink, but at least I got my lips moisturized at the same time.
