Roasted Veggies with a twist....

Donna, Rhonda and anyone else who's interested....

I never actually made the roasted veggies from the South Beach book and I lent it to a friend, so I can't even look up the recipe, but I made my own version a couple of days ago and they got rave reviews around here.

I parboiled a sweet potato, 3 carrots, and a turnip. In another pot, I parboiled some brussel sprouts. I combined 2 Tbsp Olive oil, 2 Tbsp. dijon mustard, salt and pepper and a pinch of thyme and parsley and 1/2 of a diced white onion. Tossed the veggies in it and stuck them in a 400F oven for about 20 minutes. They were ahlicious!

I'm coming for leftovers!

Those sound delish. I've just recently become a fan of Brussels sprouts and they'll taste even better cooked this way than blanched and sauteed like I do them.

Now I need to add go to the store to my list of things to do this weekend. Thanks for the tip....
