Down 8 pounds is fantastic!!!!What a difference that must make in your clothes!Snackish and didn't eat anything????That is great willpower!Glad nothing else was taken and the van is ok.

Well, Alex got on a plane this morning to go to Sweden.

I'm trying to dig out from under... In the past month, I've spent two weeks in Washington DC, 1 week with the flu, and 1/2 week in Oxford England. Now I'm trying to figure out what's where and get this place organized. And catch up on my tech editing that's behind... Ugh. AND plan for our upcoming trips in May and June and July and August... Uffda.

OTOH - I had a nice bike ride today. I was so wired from dealing with the darn travel agent about our June trip that I ended up getting on the bike and going riding for an hour and a half. It was great - sunny and warm.

Then I came home and made dinner. I had lentils and brown rice and grilled eggplant with a side salad of greens and tomato and a bit of ricotta cheese. Yum.

Anyways - I'm off to bed.

Nice to see you ladies again - it's been awhile. I've missed ya'll.

Congratulations on those 8 lbs. lost, Shar! You're doing great! I felt the same way about doing the birthday parties. I KNOW YOU are creative & you are a GREAT cook, but as for me, I think I just don't have the knack. Little ones look at the decorations/food/cake for a second, dig in & run off! You're a good mommy!

Many people simply don't like eggplant. Just like some don't like broccoli. Others don't like cilantro.

I like eggplant most ways, but my favorite preparation is the simplest:

Slice it, salt it and let it set for a half hour, rinse off the salt and juice that's been released, and pat it dry. (I'm told this helps to cut the "bitter" taste for some folks.) Then grill it on a hot grill that's been very lightly oiled with olive oil. One of the most delicious things I've tasted. Yum.
