I picked up that dvd the other day - mine had 2 Kathy Smith dvd's in it. It looks good, although I haven't done it yet. I'm still doing a bootcamp.

Good luck with your interview for the voluteer position! That sounds neat.

I forgot to post this a.m.! I'm thankful for a good medical doctor who is honest with me about my weight and health. He's making me come back in about a month for a cholesterol check. He gave me an eating plan, which is similar to what I've been doing, except a bit stricter.

Today's workout was called 5-Ring Circuit (strength moves & cardio drills). I'm not as sore at least. Tomorrow, I will walk, even though it's supposed to be a rest day. My doctor told me I should walk everyday.

This eggplant parm is from a restaurant called Maggiano's - it's a national chain, so I'm sure they've made it to Seattle at least. The restaurant reminds me of a scene from the Godfather. You expect the Sinatra Rat Pack to waltz in the front door at any moment. And the food, for the most part, is excellent.

They do fry their eggplant before layering it with the sauce and mozzarella. The portions are so large, you can realistically get four servings out of it.

Deb, have you ever tried a dish called eggplant rollatini? Basically, it's eggplant acting as manicotta wrapped around a ricotta and spinach filling. Delish!

(Do you realize as I type this that some people are still eating breakfast?????)

Maggiano's hasn't made it to the NW (or my portion thereof)...but by coincidence, I've been to the one in San Jose, Ca!
