Hi gang,

I know I haven't been around much, but I just wanted to stop in and say hello. I thought I'd have all kinds of time with the kids in school. What *was* I thinking!!!!?????

Just thought I'd share a recipe that I concocted tonight. It was really delicious. Dh went back for thirds and everyone else cleaned their plates too! I served it up with some Italian Shake and Bake chicken breasts, but I think I'll just have some with a green salad for lunch tomorrow.


Don't Tell Them It's Healthy Lasagna

1 box whole wheat lasagna noodles

1 pkg partly skimmed mozzerella cheese

Tomato Sauce:

2 Tbsp. Olive oil

1 cup onion, finely chopped

1 cup zucchini, finely chopped

½ cup carrot, grated

5 medium brown mushrooms, chopped

1 small red pepper, finely chopped

Sautee all of the ingredients above just until tender. The onions should be clear.

*Note: You can also add other veggies. I chopped up some leftover broccoli I had in the fridge. Chopped up cauliflower would be good too!

Add:

1 can of spaghetti sauce (I used 4 cheese)

1 – 16 oz. can of diced tomatoes complete with juice (do not drain)

Heat through. At the end add 2 Tbsp. chopped fresh basil.

Note: The sauce should be quite thin as the noodles will absorb the excess.

Middle layer:

1 16 oz. Container of 1% cottage cheese

1 pkg frozen chopped spinach, defrosted and well drained (squeeze the water out)

2 eggs

¼ cup parmesan cheese

Mix together and add ¼ tsp each of salt and pepper

Building the lasagna:

Line a 9 x 13 pan with tin foil (makes clean up super easy). Put a thin layer of sauce in bottom of pan. Place a single layer of noodles (don't bother cooking them!). Put a layer of sauce, a layer of noodles. Put the entire cottage cheese spinach mixture next. Put a layer of noodles and a final layer of sauce. Top with lowfat mozzarella cheese. Bake in 400 degree oven for 45 minutes. Remove from oven and let sit for 20 minutes before serving.

You are such a creative cook! I always enjoy your recipes. There was one for a chocolate ricotta low carb desert in the coupon section of Sunday's paper, and I thought of you and when we were doing the South Beach Diet (I should have stayed on it).

Rhonda, I haven't really done SBD for quite awhile now. It was a good learning lesson for me though. I would have to say that the way I try to eat now is pretty much like the Phase II part. I haven't had any ricotta desserts, but I do try to stick to whole wheat everything and limit my portions of it. It's working for me. The weight is coming off, albiet slowly.

The Kitchen Wizard strikes again! Thanks for sharing that recipe. I might be able to finally get past the idea of "whole wheat" pasta.

I swear I'm coming out there for dinner....
