I made this Succotash as a side dish this evening with a Parmesan Turkey meatloaf. I made the meatloaf the night before so it just had to be popped into the oven when I walked in the door. It's from a Weight Watcher's Cookbook so I also included the nutritional info and points. Even my daughter who is not big into vegetables enjoyed this. I varied the recipie a bit-I didn't use the tomato and substituted a box of frozen mixed vegetables for the lima beans and corn.

Makes 4 servings:

4 tsps. olive oil

1 red bell pepper, seeded and diced

1/2 med.zucchini, diced

1/2 onion, diced

1 garlic clove, finely chopped

1 tomato, seeded and diced

1 cup cooked green lima beans

1 cup fresh or thawed frozen corn kernels

2 Tbps chopped flat-leaf parsly

1 tsp paprika

1/2 tsp salt

1/2 tsp. freshly ground pepper

1/4 tsp dried marjoram

Heat the oil and saute the bell pepper, zucchini, onion and garlic until wilted about 8 minutes. Add the tomato, saute 2 minutes. Stir in the lima beans, corn, parsley, paprika, salt, pepper and marjoram. Reduce the heat and simmer, covered until the flavors are blended, about 10 minutes.

Per serving: 154 calories, 5 g Total fat, 1 g Saturated far, 0 mg cholesterol, 327 mg sodium, 24 g total carbohydrate, 6 g fiber, 6 g protein 32 mg calcim. Points per serving: 3

Parmesan Turkey Meatloaf

1 Tbsp. olive oil

1 onion, chopped

1 1/4 lbs. ground turkey

4 slices whole wheat bread, made into fine bread crumbs

1/2 cup fat free milk

1 egg white, lightly beaten

3 Tbsp. ketchup

2 Tbsp grated Parmesan cheese

1/2 tsp. garlic powder

1/2 tsp. dried basil

1/4 tsp dried thyme leaves, crumbled

1/4 tsp. freshly ground pepper

Saute the onion in oil until tender. Mix all ingredients together. Put meatloaf into a 8 x 5 loaf pan sprayed with nostick cooking spray. Bake for 50 to 60 minutes.

Per serving: 181 calories, 9 g Total fat, 2 g.saturated fat, 53 mg cholesterol, 247 mg. sodium, 10 g. Total Carbohydrate, 1 g fiber, 15 g protein, 64 mg calcium. Points per serving: 4

Here's a bagel spread recipe from the Fat to Muscle book. Makes 4 servings, each serving equals 1 serving dairy:

16oz fat free cottage cheese

1 tbsp finely chopped chives

1/2 tsp garlic powder (or to taste)

1 tbsp paprika (use Hungarian if possible)

Combine all ingredients, chill for at least 1 hour. Use as a sandwich spread, vegetable dip, baked potatoe accompaniment, bagel topping.
