Sassy-Eggplant Sauce

I think you asked that I post this recipe. I made it last night with canned fire roasted tomates. Added just a little extra kick! Great alongside a big veggie filled salad.

Fettucini with Eggplant Sauce
Ingredients:

1 small eggplant
2 Tbsp. olive oil
½ cup chopped onion
1 clove garlic, minced
1 14 ½ can Italian style tomatoes, undrained
1 15 oz can tomato sauce
1 med.green pepper, cut into strips
2 tsp. dried basil, crushed
1 tsp. dried oregano, crushed
Salt
Ground black pepper
12 oz. fettucini

Directions:

Peel eggplant, if desired. Cut eggplant into ½ inch cubes.

In a large saucepot, cook eggplant in hot oil about 7 minutes or
Nearly tender. Add onion and garlic; cook and stir 3 minutes.
Add tomatoes, tomato sauce, sweet pepper, basil and oregano. Bring to a boil, reduce heat. Cover and simmer for 30 minutes.
Season to taste with salt and pepper.
Meanwhile cook the pasta according to package directions; drain and return to saucepan. Add sauce to pasta; toss; Makes 6 main dish servings.

Per serving: 319 calories, 6 g total fat (1 gm sat.fat), 0 mg cholesterol, 564 mg.sodium, 50 g. carbohydrates, 5 g fiber and 10 g protein.

Susan if you change the fettucini to whole wheat pasta you have a core product there and I just might give it a go! Thanks!
