Just came up with the great idea to start the check in since I'm upstairs for the afternoon.

It was an OK kind of day. There's just some things about life in that office that I'm just never going to understand so I'm going to stop trying.

The chicken vegetable pizza was delicious. DD was busy picking most the veggies off of it. She's definitely not a vegetable person. I wasn't sure how it would go over with DH but he seemed to enjoy it and it seemed to fill him up.

Otto and I went out for our after dinner walk. It wasn't as cold or windy as the past few nights. I did find a pair of DS'thermal underwear to put on under my sweat pants and a pair of DH's heavy long socks. I'm quite the sight going out the door. I think it takes longer to dress and undress than the walk takes. But I sure was warm!

I'm now all snuggled up in my pjs and comfy robe and I'm headed to watch Oprah. See if I can pick up some tips on decluttering.

Hope everyone has enjoyed a good day and sweet dreams await!

Yes it was and here's the recipe-the only changes I made were I added some zucchini, omitted the tomato and they suggest using the chicken from a store bought rotisserie chicken. I used grilled chicken that Perdue or Oscar Mayer makes called Short Cuts. It's in the meat section and come already cooked. This would be great without the chicken and just making a veggie pizza! Delicious!

Ratatouille Pizza with Chicken

Ingredients:

1 tsp olive oil
1 Japanese eggplant, halved lengthwise and cut into ¼ “ thick slices
1 red bell pepper, cut into ¼” strips
½ small red onion, thinly sliced
1 cup sliced mushrooms
¾ tsp Italian seasoning
¼ tsp salt
4 garlic cloves, minced
1 (10 oz) Italian flavored thin pizza crust (such as Boboli)
1 cup chopped skinless, boneless chicken breast meat
1 cup (4oz) preshredded reduced fat pizza blend cheese
3 plum tomatoes cut into ¼” thick slices
Cooking spray
3 Tbsp finely chopped fresh flat leaf parsley

Directions:

1. Preheat oven to 375.

2. Heat a large nonstick skillet over medium high heat. Add oil to pan. Add eggplant bell pepper, and onion, sauté 3 minutes or until eggplant begins to soften. Reduce heat to medium. Add mushrooms, and cook 3 minutes, stirring frequently. Add Italian seasoning, salt, and garlic, cook 1 minute, stirring constantly.

3. Place crust on a baking sheet. Spread vegetable mixture evenly over crust, leaving a ½” border. Arrange chicken over vegetable mixture, sprinkle evenly with cheese. Bake at 375 for 25 minutes or until cheese is bubbly and tomatoes are softened. Sprinkle with parsley.

Hope everything is OK with your sister Patty. Is this your twin? I've been through this with the thyroid so I can understand some of what she must be going through.

Hugs,

Daarn child of mine wants the computer so I need to make my check in fast. Might be a good thing since I am still in my work clothes and I still need to clean up the rest of the dinner table. Bill and the boys went out to check out Rob's car and pick up some kind of trunk hatch back for Billy's mustang. What ever guys! Work was busy, day flew by but it was a good day. Lots of learning for me and we even had a laugh or two. Actually my boss got back late from a closing so we sat down around 4:30 to review but only did a couple since he knew I wanted to head home. The three of us enjoyed a drink together, Marie and I had a glass of Pino and he has some Sambuca. Dinner was done (well most of it) and the rest went together easily. Bill brought in the hard rolls, I opened some beans and some Green Giant Broccoli. I had brown rice instead of the roll and I skipped the beans. I added a salad to mine. My head is heavy and I think the week has caught up. I think a midweek early night might do me wonders. Have a good night ladies.
