Day's ending....

It was an OK kind of day. There's just some things about life in that office that I'm just never going to understand so I'm going to stop trying.
The chicken vegetable pizza was delicious. DD was busy picking most the veggies off of it. She's definitely not a vegetable person. I wasn't sure how it would go over with DH but he seemed to enjoy it and it seemed to fill him up.
Otto and I went out for our after dinner walk. It wasn't as cold or windy as the past few nights. I did find a pair of DS'thermal underwear to put on under my sweat pants and a pair of DH's heavy long socks. I'm quite the sight going out the door. I think it takes longer to dress and undress than the walk takes. But I sure was warm!
I'm now all snuggled up in my pjs and comfy robe and I'm headed to watch Oprah. See if I can pick up some tips on decluttering.
Hope everyone has enjoyed a good day and sweet dreams await!
Susan
LOL Are you hassling the handy guy??? Loved the
Miss P
Yes it was and here's the recipe-the only changes I made were I added some zucchini, omitted the tomato and they suggest using the chicken from a store bought rotisserie chicken. I used grilled chicken that Perdue or Oscar Mayer makes called Short Cuts. It's in the meat section and come already cooked. This would be great without the chicken and just making a veggie pizza! Delicious!
Ratatouille Pizza with Chicken
Ingredients:
1 tsp olive oil
1 Japanese eggplant, halved lengthwise and cut into ¼ “ thick slices
1 red bell pepper, cut into ¼” strips
½ small red onion, thinly sliced
1 cup sliced mushrooms
¾ tsp Italian seasoning
¼ tsp salt
4 garlic cloves, minced
1 (10 oz) Italian flavored thin pizza crust (such as Boboli)
1 cup chopped skinless, boneless chicken breast meat
1 cup (4oz) preshredded reduced fat pizza blend cheese
3 plum tomatoes cut into ¼” thick slices
Cooking spray
3 Tbsp finely chopped fresh flat leaf parsley
Directions:
1. Preheat oven to 375.
2. Heat a large nonstick skillet over medium high heat. Add oil to pan. Add eggplant bell pepper, and onion, sauté 3 minutes or until eggplant begins to soften. Reduce heat to medium. Add mushrooms, and cook 3 minutes, stirring frequently. Add Italian seasoning, salt, and garlic, cook 1 minute, stirring constantly.
3. Place crust on a baking sheet. Spread vegetable mixture evenly over crust, leaving a ½” border. Arrange chicken over vegetable mixture, sprinkle evenly with cheese. Bake at 375 for 25 minutes or until cheese is bubbly and tomatoes are softened. Sprinkle with parsley.

Hope everything is OK with your sister Patty. Is this your twin? I've been through this with the thyroid so I can understand some of what she must be going through.
Hugs,
