In keeping with our Fitness Challenge thought I would share a few recipes. The salad one is from this months' Cooking Light. DD and I really enjoyed it. It would probably be good as a main dish as well with some grilled chicken included. Super simple, quick to fix and very tasty. I also put in a stove top beans recipe. It's a WW recipe and I've had rave reviews. Even DD likes it and she doesn't like beans.

Spinach-Apple Salad with Maple-Bacon Vinaigrette

Ingredients:

1 Tbsp maple syrup
1 tsp red wine vinegar
¼ tsp Dijon mustard
1 Tbsp extra virgin olive oil
1 Tbsp fresh chopped chives
¼ tsp salt
¼ tsp freshly ground black pepper
2 slices center cut bacon, cooked and crumbled
2 ½ cup julienned cut Granny Smith apple (about 1 apple)
¼ cup thinly vertically sliced red onion
1 (6oz) package fresh baby spinach

Directions:

1. Combine the first 3 ingredients in a small bowl, stirring well with a whisk. Gradually add oil, stirring with a whisk until well blended. Add chives, salt, pepper and bacon; stir with a whisk until well blended.

2. Combine apple, onion, and spinach in a large bowl. Drizzle with vinaigrette; toss to coat. Serve immediately. (6 servings)

Stovetop Baked Beans

Ingredients:

1 Tbsp butter
1 ¼ cups chopped onion
¾ cup chopped green pepper
2 garlic cloves, minced
1 cup ketchup
¼ cup packed brown sugar
¼ cup maple syrup
2 Tbsp Worcestershire sauce
2 tsp barbecue smoke seasoning (such as Hickory Liquid Smoke)
2 tsp prepared mustard
1 (16 oz) can red beans, rinsed and drained
1 (15 oz) can Great Northern beans, rinsed and drained

Directions:

Melt butter in a medium saucepan over medium high heat. Add onion, bell pepper, and garlic; sauté 4 minutes. Stir in ketchup, and remaining ingredients; bring to a boil. Reduce heat; simmer 15 minutes, stirring occasionally.

Yield 8 servings (serving size; ½ cup)
