post? Would you share your favorite recipe? And/or give an idea or two for lowering fat and calories in traditional Thanksgiving dish.

I don't have a recipe because what I make is all in my head. Oh actually I do...Cranberry relish....


In a food processor put a bag of fresh cranberries, 1 or 2 oranges peeled, and 1/2 to 1 cup of sugar. Whirl and twirl to the consistency you like. Very easy and a family favorite. Some people don't peel the oranges but I do.


Now a few lower fat tricks...


Make stuffing with reduced sodium/fat free chicken broth. No butter needed except for a little to saute celery and onions if you use them. It can make it even lower in fat if you put it in a separate baking dish instead of in the bird. I don't go that far.


Make pumpkin pie with Fat Free evaporated milk and egg substitute.


Of course, use chicken broth and really skim all the fat off the drippings for the gravy. Little or no butter in the mashed potatoes. Chicken broth is good there too and sometimes

Almost all my recipes are in my head! When I get home, I'll post my recipe for cranberry bars - one of my favorite desserts ever.


I don't make my T-day food lowfat.

I must say I agree with Judy, I look at the holidays as holidays, off days to enjoy and not worry about what food I eat or drink. I think my normal routine is much healthier now then it was years ago so I cook and eat what I want keeping portion control the first thought on my mind.


Just a thought about all this left over turkey being thrown around here. Gosh we already have left overs and no one has sat down and eatten a meal, lol! Anyhow, does anyone make homemade chicken pot pies? I always make one with the extra turkey meat and my guys just love, love, love it. It's very simple and I guess it can be fairly healthy. I use the Pillsbury pie crusts, steam a large bag of mixed vegtables (peas, carrots, lima beans, stringbeans), 3 cans of Healthy Request Cream of Mushroom soup (lot fat), 3 or 4 boiled potatoes cut into hunks, a whole bunch of left over turkey/chicken meat. Mix all together, put pie crust ontop and bake for 50 to 60 minutes.

CORN PUDDING


2 cups canned corn (well drained)


2 eggs, slightly beaten


1 teasp. sugar


1 1/2 Tablespoons melted butter


2 cups scalded milk


1 1/4 teaspoons salt


1/4 teaspoon pepper


Combine all ingredients and pour into a greased casserole. Bake in a pan of water at 325 degrees for 1 hour and 15 minutes or until firm. (stick a knife in to test). Serves 5-6

BUTTERNUT SQUASH SUPREME


(Tastes like pumpkin pudding) I could eat this stuff till I make myself sick! LOL!


2 cups cooked butternut squash


3 eggs


3/4 stick butter


1 c. milk


1/2 c. sugar


1/2 teasp. ginger


1/2 teasp. coconut extract


Angel Flake moist coconut (about 1/2 c.)


1/2 c. raisins (optional, but I like them)


Combine all ingredients and stir with spoon. Pour into greased casserole and bake in a pan of water at 350 degrees for 1 1/2 hrs or until set well. Test with a knife.

CRANBERRY ORANGE RELISH CAKE


It's sweet and tart. The more you eat, the better it gets.


1 white cake mix (Duncan Hines)


1 small instant pudding mix -- coconut cream or French vanilla


4 egg whites


1/2 c. oil


3/4 c. water


1 c. cranberry-orange relish


Mix all ingredients except relish and beat 3 minutes. Spoon 1/3 batter into greased and floured bundt ban. Make slight depression in batter. Spoon 1/2 relish into depression, being careful not to let it touch sides of pan. Cover with 1/3 more battr, last 1/2 of relish, and final 1/3 of battre. Bake 45-50 minutes at 325 degrees. Cool in pan 15 minutes. Cool before icing


ICING


2 c. sifted 10X sugar


2 T. butter


2 T. milk


1/2 teaspoon almond extract


Beat together until smooth. Frost cooled cake.
