Q What is one of your favorite recipes or the name of a favorite cookbook for meals that are easy and fast?

I love my crockpot and I do have many recipes that are ready and on the table in 30 to 45 minutes. I love my Cooking Light Cookbook and magazine for new ideas.

Q It’s beginning to look like Christmas….How many of these holiday items are in your home?

Christmas CD’s: Quite a few Christmas CD. I'm thinking about the new Josh Groban CD to add on this year.

Christmas DVD / VHS: Christmas Story, Miracle on 34th Street. There are probably more but they escape me at the moment
Dinnerware / Stemware / Glasses / Mugs or Serving-ware with a Christmas motif: I have a set of Niko "Happy Holidays" dinnerware and various Christmas mugs that have been collected through the years.

Santa figurines: I have several Santa figures that I love. One is a Santa holding the Nativity and the other is my kneeling Santa over Baby Jesus.

Geez, I misunderstood and thought you just wanted us to name some. These aren't particularly fast, but they're good for cold weather.


Corned Beef and Cabbage


Corned beef brisket, 4-5 lbs.


1 whole onion


4 cloves


6 peppercorns


1 bay leaf


1/2 teasp. rosemary


1 clove garlic


1 green pepper rings (optional)


1 stalk celery or 1 teasp. celery seed


few springs parsley or a little dried parsley


1 head cabbage


potatoes, peeled and cut into large chunks (optional)


Place corned bee in large pot; cover with water. Add onion studded with cloves, peppers, bay leaf, rosemary, garlic, green pepper, celery, and parsley. Bring to boil, covered; reduce heat and simmer 4-5 hours. Wash cabbage. Cut into quarters; trim off core, leaving enough to hold cabbage together. 1/2 hour before meat is done, skim excess fat from top and arrange cabbage on meat. Simmer, covered, 30 minutes. Can also add cut up potatoes.


I do cook the potatoes. When I serve the meal, I serve hot canned tomatoes over the cabbage. Delicious!
