Susan I have a Weight Watcher recipe for a broccoli soup that I have modified some to make it more appealing and it takes less then 20 minutes to throw together. Both Katie and Robbie enjoy it with me. I will post it below if anyone is interested.
Cream of Broccoli Soup
4 boxes of broccoli, chopped
1 large onion, chopped
10 cups fat free chicken broth
1 TBSP salt
Cracked pepper
1/4 cup fat free half & half
Put three of the boxes of broccoli, onion, salt and chicken broth into a large pot. Bring to a boil and simmer for 10 minutes until broccoli is tender. Pour contents into a blender....you will need a second pot.
Well I made it the gym so I was happy about that. Then I drove out to the horse and I was happy about that. Although Katie did not ride Daniel because he was a little on the "happy" side to see her. So instead we brushed him and made him presentable, lol. Then she took him out the ring and lunged him. He ran around in circles for like 25 minutes with his ears all perky. She had fun with him and that is what counts. Actually I went back and sat in my car half way threw while they did their thing. Katie then did all the finishing work and clean up alone (very proud of her) and we headed back. We took the scenic route back which was fine then stopped at Blockbuster & Stop and Shop. It was really raining hard by then so Katie rented the Play Book with the Rock. I think that was the name of the movie. I was out of laundry detergent so I picked up some Tide and we headed home. Bill was just finishing up what he could and it was already 4:30 so the three of us cleaned up, showered and headed to the local Mexican Resturant. Katie and I had Fajitas.........yum! There was a couple sitting next to us with this little 2 year old girl who was flirting with Bill. She kept touching the back of his jacket, lol. Bill was flirting back with her and she had the giggles. Before you know we were in full conversation with the couple. We came home, lit the fireplace, made some coffee/tea
