I really need to get my vegtable servings into me this week to see if it fills me up and makes the difference on the scale yet I find with this cold weather I have to force myself to eat a salad. Any other thoughts? Like now I am eatting my WW homemade chili and that has peppers, onions, corn, and beans in it. Tonight is vegtable lasagna that I made, I know I need more yet that salad craving aint there. I am hoping my trip down south on Friday will spark some summer salad appetite!

The fastest and easiest way for my to up my veggie intake is to drink low sodium V-8 with a little lemon juice in it. I have trouble eating salads as meals

Good suggestion on the low sodium V-8. I have not had it but I should buy some and try. I know I will have to count the points but for those fast grab and go days its not a bad suggestion. I enjoy the veggies in my eggs too but that takes time. I guess I could do a batch ahead of time then just use them as needed. Sauteed mushrooms in my scrambled egg whites is good and so it the pepper.

I do the vegtable soup already, I guess I eat more then I realize, lol. The pot of chicken soup I made last week had tons of carrots, celery, leeks, onion, spinach, turnips..............! I have to admit I have never had roasted vegtables, not even off the BBQ but I guess I need to step out of the box and learn how to cook them.

I find it easier to get in my veggies than the fruit. Rhonda has a good idea about the V-8. Remember, a serving of veggies is a half cup except for salad.


I love zucchini fried up with onions in a little olive oil. Just od'd on broccoli rabe. Stir frys are another great way to get veggies in. Gotta love chicken and broccoli.


Luckily I like salads but I only eat it as a meal for lunch. For dinner I like something hot and whole wheat pasta with veggies is a good source of veggies too.


Vegetable soup is great too.

Years ago I used to make my own version or WW version of french fries using potato wedges tosses lightly in olive oil then sprinkled with salt, pepper, garlic powder, paprika.........guess I could do it with these vegtables we are talking about. I would have to count the olive oil in my daily points but I like these ideas we are tossing around.
