I really need to get my vegtable servings into me this week to see if it fills me up and makes the difference on the scale yet I find with this cold weather I have to force myself to eat a salad. Any other thoughts? Like now I am eatting my WW homemade chili and that has peppers, onions, corn, and beans in it. Tonight is vegtable lasagna that I made, I know I need more yet that salad craving aint there. I am hoping my trip down south on Friday will spark some summer salad appetite!

I used to do that with sweet potatoes, but had forgotten about them.


Roasted asparagus with olive oil salt or seasoned salt and pepper are really good.

Add some different things to your salads - sunflower seeds, bean sprouts, radishes, sliced almonds, croutons, goat cheese, a sliced mozarella cheese stick, hard boiled eggs, jalapenos, olives, feta.....


One of my favorite ways to eat salad is with a dressing of red wine vinegar and olive oil, garlic powder and a splash of salt, with chopped walnuts, dried cranberries, and coconut added.
