What is on the top shelf of your refrigerator? 1% & skim milk, OJ, leftover napolean cake, Cool Whip, jarred hot peppers, chicken broth, pineapple juice,and I think there's a small bottle of cranberry juice in there too. Time to clean out the refrigerator! Do you normally purchase groceries on a given day, or do you make a stop at the grocery store several times a week? Once a week
2. What is your favorite flower that is blooming right now in your yard (or a neighbor’s yard)? We don't have many flowers this year. But my hydrangea bush is blooming right now with beautiful pinky purple flowers Do you have any fresh cut flowers in your house today? No-but I would love some.

4. Do you do something others may find peculiar / quirky or something that your mother did (it annoyed you) and now you find yourself doing the same exact thing? I leave my kitchen cabinet doors open-which drives my husband nuts!

5. Share one of your favorite summertime recipes with us – one where we can utilize the fresh veggies or fruit now in abundance in the garden or from the farmers market? It can be as simple as cutting up a watermelon, tossing in a few grapes, sprinkling with coconut, and enjoying in a bowl … which leads me to ask … do / did any of you ever lightly salt your watermelon? I've never heard of that I can remember doing that as a child (that was the only way I ever saw my grandparents eat watermelon – salted wedges).
Pineapple Zucchini Bread
Ingredients:
1 ½ cup sugar 2/3 cup unsweetened applesauce 1/3 cup canola oil 2 egg whites 1 egg 2 tsp vanilla extract 3 cups all purpose flour 2 tsp ground cinnamon 1 ½ tsp baking powder 1 tsp salt ¾ tsp ground nutmeg ½ tsp baking soda 2 cups shredded zucchini 1 can (8 oz) crushed pineapple, drained 1/3 cup chopped walnuts
Directions:
In a large mixing bowl, beat the sugar, applesauce, oil, egg whites, egg and vanilla until blended. Combine the flour, cinnamon, baking powder, salt, nutmeg and baking soda; gradually beat into the sugar mixture until blended. Stir in the zucchini, pineapple and walnuts.
Transfer to two 8 x 4 x 2” loaf pans coated with cooking spray. Bake at 350 for 50-60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.
Nutrition Facts: 1 slice 159 calories, 5 g fat, 9 mg cholesterol, 158 mg sodium, 27 g carbohydrate, 1 g fiber, 3 g protein.
