Slow Cooked Steak Fajitas

1 beef flank steak ( 1 ½ pounds)
1 can (14 ½ oz) diced tomatoes with garlic & onion
1 jalapeno pepper, seeded and chopped
1 garlic cloves, minced
1 tsp. ground coriander
1 tsp. ground cumin
1 tsp. chili powder
½ tsp. salt
1 medium onion, sliced
1 medium red pepper, julienned
1 medium green pepper, julienned
1 T. minced fresh cilantro or parlsey
2 tsp. cornstarch
1 Tbsp. water
tortillas

Thinly slice steak across the grain into strips; placed in a 5 qt slow cooker. Add tomatoes, jalapeno, garlic, coriander, cumin and chili powder and salt. Cover and cook on low for 7 hours. Add onions, peppers and cilantro. Cover and cook 1-2 hours longer or until meat is tender.
Combine cornstarch and water until smooth; gradually stir into slow cooker. Cover and cook on high for 30 minutes until slightly thickened.

Slow Cooker Lasagna

Ingredients:

1 lb Italian sausage (I use turkey sausage)
1 medium onion, chopped (1/2 cup)
3 cans (15 oz each) tomato sauce
2 tsp dried basil
2 cups shredded mozzarella cheese (8 oz)
1 container (15 oz) part skim ricotta cheese
1 cup grated Parmesan cheese
15 uncooked lasagna noodles

Directions:

1. Cook sausage and onion in 10” skillet over medium heat 6 to 8 minutes, stirring occasionally, until sausage is no longer pink; drain. Stir in tomato sauce and basil.

2. Mix 1 cup of the mozzarella cheese and the ricotta and Parmesan cheeses.

3. Spoon one-fourth of the sausage mixture into 6 qt slow cooker; top with 5 noodles, broken into pieces to fit. Spread with half of the cheese mixture and one-fourth of the sausage mixture. Top with 5 noodles, remaining cheese mixture and one-fourth of the sausage mixture. Top with remaining 5 noodles and remaining sausage mixture.

4. Cover and cook on low heat 4 to 6 hours or until noodles are tender.

5. Sprinkle top of lasagna with remaining 1 cup mozzarella cheese. Cover and let stand about 10 minutes or until cheese is melted. Cut into pieces.

SLOW COOKED MEAT LOAF

Ingredients:

1 ½ lbs extra lean ground beef
¾ cup chopped onion
½ cup seasoned bread crumbs
¼ cup finely chopped green bell pepper
¼ cup ketchup
2 Tbsp prepared mustard
1 tsp garlic powder
1 tsp oregano
¼ tsp salt
¼ tsp freshly ground pepper
1 large egg white
Cooking spray
2 Tbsp ketchup

Directions:

1. Combine first 11 ingredients in a large bowl, mix well. Form mixture into an 8 ½ x 4 ½ inch loaf.

2. Fold a 12” long piece of aluminum foil in half lengthwise. Spray foil with cooking spray. Place meatloaf on foil, leaving a 2 to 3” border at each end of foil. Lift foil, and place in slow cooker. Spread 2 Tbsp ketchup over top of meat loaf. Cook on HIGH 4 hours or until a meat thermometer registers 170. Using foil, carefully life meat loaf out of cooker. Let stand 10 minutes, cut into 6 slices.

Shredded Beef Sandwiches

Ingredients:

¾ cup cola
¼ cup Worcestershire sauce
2 garlic cloves, minced
1 Tbsp white vinegar
1 tsp reduced sodium beef bouillon granules
½ tsp chili powder
½ tsp ground mustard
¼ tsp cayenne pepper
1 boneless beef rump roast
2 tsp canola oil
2 medium onions, chopped
½ cup ketchup
8 kaiser rolls

Directions:

In a 4 cup measuring cup. Combine the cola, Worcestershire sauce, garlic, vinegar, bouillon and seasonings; set aside. Cut roast in half. In a nonstick skillet, brown meat in oil on all sides. Place onions in a 3 qt slow cooker. Top with meat. Pour half of cola mixture over meat. Cover and cook on low for 8-10 hours or until meat is tender. Cover and refrigerate remaining cola mixture. Remove meat from cooking liquid and cool. Strain cooking liquid, reserving onions and discarding the liquid. When meat is cook enough to handle, shred with two forks. Return meat and onions to slow cooker. In a small saucepan, combine ketchup and reserved cola mixture; heat through. Pour over meat mixture and heat through. Serve on rolls.

Nutrional Anayalsis:

One serving ½ cup meat mixture with roll( equals 354 calories), 10 g fat (2g saturated fat); 59 mg cholesterol, 714 mg sodium, 40 g carbohydrate, 2 g fiber, 26 g protein

Soak one bag beans (pinto, mixed for soup, or navy) overnight.


Dice one medium onion, 2 ribs celery and two medium carrots.

Great ideas Nancy!


I do pot roast in the crock pot...


Line the bottom of the pot with big pieces (halves or quarters) of potatoes and cut up carrots, throw in the roast, put wedges of onion over and mushrooms and cut or whole green beans around, then enough water to cover the potatoes.

Crockpots do come in different sizes although most of the ones sold in stores are the bigger ones which are usually about 6 qts. A lot of them now have timers on them and will shut themselves off and have a warming feature. I will say I would like one of those. DD got one as a shower gift and am jealous!

I have a smaller one as well. It's a 3 qt one which is great for making steel cut oatmeal overnight. I also have a dessert recipe for Hot Fudge Spoon Cake which is so good! Probably not so good for the waistline but a family favorite!
