I eat lots of salads.
You know I really don't eat that much salad at all. I find that just being one here the lettuce goes off before I can finish it, though I have been buying the bags of lettuce recently as they seem to last a little longer. When I do have

I do love salads but don't them eat them as much as I would like!
I just wanted to give everyone a head's up about salads. In truth they can be worse than regular foods, carry more fat, and more calories. So, watch what you're putting on your salad, or watch the ones you buy. =)
I always just think salads are good for you. But if you read the stats on some of them, with over 600 calories and over 20g of fat. It's downright scary.
As for the question. I eat salads from the fast foods places, but I tend to watch my intake, the dressing, and what's on it. Usually I only eat the ones with chicken. I can only handle so much rabbit food, y'know. although, I do love a salad. :D

Usually, I make salad with romaine lettuce, cucumbers, grape tomatoes, bell peppers, red onion, carrots, and a few olives (kalamatas are my faves, no more than 3 or 4 for each of us though). Sometimes I throw in artichoke hearts (only a couple since they are soaking in oil!) or a little chopped cheese like feta or stilton (a little seems to go a long way and we LOVE cheese). For dressing, I sprinkle on a little kosher salt, a whole lot of freshly ground black pepper, and some kind of vinegar. I love vinegar and we have 6 different varieties in our kitchen - balsamic, red wine, white wine, sherry vinegar, champagne & strawberry vinegar (so good!!), rice vinegar. It has virtually no calories and is so flavorful. If I want more of an Italian taste, I add some basil, oregano, and a little sugar. Very occasionally, I also put in a tablespoon of olive oil for the two of us since it adds a certain warmth.
I make a light version of Waldorf salad with chopped apples, celery, craisins & walnuts (just a little), honey, and lemon juice. I sometimes sprinkle on a little ground cardamom. If I want to splurge, I also throw in some crumbled stilton and sprinkle of sesame seeds.
We make a dinner salad sometimes with the basic salad from above and some grilled chicken that's been marinated in lemon juice, garlic, salt, and pepper. We've also had salad with shrimp saute'd in a little olive oil with garlic and red pepper flakes.
One thing though - if I have a salad for lunch, I can't eat it again for dinner!
I have been having Spinach with fresh basil leaves, a sprinkle of walnuts, low fat shredded cheddar, tomatoes and either baslamic vinegar or fat free thousand islands.
We shoud make a salad recipe folder. Steffie your sound great.

I try to eat a salade at least once a day and sometimes before our main meal in the evening. It is so good for us why don't we eat it more often?
My most favorite salade is made with spinich, mushroom, onion, baccon pieces (only a little :-)... honest!!) tomatoe and what ever else you would like. The dressing is made with maple syrup and mayonaise. It tastes awsome.

I thought the French ate their salad after the meal, or is that only the snooty ones from the fancy restaurants here that ask if you want your salad before or after and then look at you weird if you say before?
Your salad sounds great, I love spinach.
