Apple Muffins (whole wheat)

This is another recipe from the "Whole Foods for the Whole Family" recipe book. This is my all time favorite muffin! Warm out of the oven, it's better than any apple pie!
2 unpeeled apples, chopped (I like kind of big chunks)
1/2 cup honey
1 egg, beaten
1/4 C oil
1 C milk
1 3/4 C whole wheat flour
1/2 to 1 tsp ground cinnamon
1/2 tsp salt
2 tsp baking powder
1/4 cup wheat germ
Combine apples and honey in bowl, tossing to coat. Beat egg, oil and milk in large bowl. Sift in flour, cinnamon, salt and baking powder. Add wheat germ, stirring to moisten. Fold in apple mixture. Spoon into greased muffin cups. Bake at 400 for 20 to 25 minutes. May substitute brown sugar for honey or butter for oil. Yield: 16 servings.

***I have, when I didn't have wheat germ, just added another 1/4 cup whole wheat flour in place of the wheat germ. This is really good. :)

And just a tip for those of you who might not know...but if you grease the measuring cup (w/ oil, pam, butter...whatever) just a tiny bit...then when you pour the honey in, it will all come out very easily. And I always use muffin liners...it makes it much easier clean up after cooking the muffins. :)

I read somewhere that you can substitute the oil for apple sauce. I think I will give this a try next time. It sould make them even more healthy. I will post here when I do try it and let you know how they turned out. But it may not be for a while since I just made some.

I've heard that too :). I did the math, and it would probably shave about 7 calories a muffin by using apple sauce. I like to use healthy oils...just about anything that is "cold pressed"...there's olive oil, safflower oil and several others. I have not tried substituting the apple sauce for oil in things yet...but I did recently buy a jar of it, just for that purpose...but keep forgetting to try it. Let me know when you do! :)
