Whole grain corn bread & also Dressing

Whole Grain Corn Bread (SO GOOD)

1 1/2 cup whole grain cornmeal
1/2 cup whole wheat flour
1/4 cup oil
2 tsp baking powder
1 tsp salt
1/2 tsp baking soda
1 1/2 cups water

Bake at 400 in a greased 8x8 pan for 25 to 30 minutes.

If you cut it into 16 peices...each peice is 65 calories.

Dressing: (My husband's all time favorite food...he says *mine* is even better than his mom's)

crumble up the cooked cornbread (after it cools a little!) and in a bowl mix it with some whole grain bread (I used 3 peices) cut or torn into small chunks and add 2 to 3 eggs, some poultry seasonings, onions and celery (which I sauteed in 1 T butter) and about 4 cups of chicken broth. Put mixture back into the 8x8 dish (it will be soupy looking) and cook at 350 until firm...probably about 45 minutes. My ingredients added up to be 100 a serving (makes 16 servings).

***the dressing is just an eyeball-it type recipe. It's a variation of what my MIL makes. Variations are numerous and fun. :) The main difference in hers vs mine is that I use whole grain cornbread and whole wheat bread...she uses jiffy mix cornbread and stale biscuits/white bread...plus lots of butter in hers...and I like to saute things (like the onions and celery) and she doesn't do that. I have always liked hers..it's very good...but I like mine even better too, lol.
