Crock-pot: Chicken-Vegetable Dish

Since several of us are talking about crock-pots, I thought I would post a healthy recipe down here. Here is a recipe I have marked in my "Fix it and Forget it" that I plan to make some time soon.
Chicken-Vegetable Dish
4 skinless chicken-breast halves, with bone in
15 oz can crushed tomatoes
10 oz pkg frozen green beans
2 cups water, or chicken broth
1 cup brown rice, uncooked
1 cup sliced mushrooms
2 carrots, chopped
1 onion, chopped
1/2 tsp minced garlic
1/2 tsp herb-blend seasoning
1/4 tsp dried tarragon
1. Combine all ingredients in slow cooker.
2. Cover. Cook on High 2 hours, and then Low 3-5 hours
Let me plug this in to fitday and see how many calories a serving it is....ok, using medium size chicken breast it should be about 481 a serving...could be more or less depending on the size of the chicken breasts you use. :)
Also, if you can't turn it down...because you are going to be gone all day...you can just omit the uncooked brown rice...and cook it on Low all day...then stir in some *cooked* brown rice when ready to serve it.
