Healthy Bread Recipe

Where is the "yum" icon??? lol. Ok, I'm making bread today. I used to do this a few times a week, but the third baby made me take a few years off, lol. If you are a carb-a-phobe, don't freak out...whole grain carbs are what your body really wants...not that white flour that is devoid of all good things. It takes time and energy to break down whole grains....and so that means more calories burned and also satisfied hunger levels. :) Here it is:
LLL Whole Foods for the Whole Family: Bread recipe
1 to 2 T yeast
2 1/4 to 2 3/4 C warm liquid
1 to 4 T honey, molasses, etc
2 t salt
1/4 cup butter or oil (optional)
6 to 8 cups whole wheat flour
1. Dissolve yeast in warm liquid in a large bowl (about 85 degrees) w/ 1 tsp honey. Let stand until it bubbles up...about 5 to 10 minutes.
2. Add remaning honey, salt, butter and 3 C flour. Beat by hand 200 strokes or 2 minutes at medium speed w/ an electric mixer. Add 1 more cup flour and beat briefly.
3. Knead, adding flour as needed, 10 - 15 minutes.
4. Put in oiled bowl, cover loosely w/ plastic wrap, let rise for about an hour.
5. Punch down, divide and put in oiled pans. Cover again and let rise about 30 minutes.
6. Preheat oven to 350 - 375 and bake for about 35 minutes.
Optionals:
substitute for equal amount of flour:
1/4 to 2/3 C wheat germ
½ cup bran
½ cups rolled oats or other grain
up to 1 ½ c rey flour
½ cup cooked cereal
1/4 cup sesame, sunflower, flax etc seed
1/4 cup cornmeal
½ cup chopped nuts
1 cup raisins
***Today I made w/ 6 ½ cups flour, 2 T honey, 1/4 cup oil, 1 T flax, 3 T rye flakes ...which adds up to 1709 a loaf (makes two loaves). So just divide that number by however many slices you get out of the loaf. :)
Feel free to ask me any bread making questions...the above was typed out on my computer to put in my "favorite recipes" folder...so it may be a little vague for beginners. And a little tip....I use all whole wheat except for when I'm kneading the bread...I find that kneading w/ whole wheat is too sticky for me...white flour does much better...and it's just a little, so doesn't diminish the whole-grain-ness. ;)
Enjoy! This is worth the effort! It's like "magic bread"...because when I eat home made whole grain bread...it is a thousand times easier to avoid all junk and over eating...I think because it gives my body what it needs. I dont know why, but it just does. ;)
