Good suggestions Miranda-- I've never had wasabi peas, they're green and dried, right? I may have had them in a like 'chinese' cracker mix, but I have seen them sold separately too....I'll try to remember to pick some up the next time I see them.
Kerstin....I know we've had the edamame conversation before- try them- they are LOADED in protein!!
One of my all time favorites is a refried bean burrito...And they are uber easy to make
Use about 1/4 cup fat free refried beans place on one soft tortilla add a T or two of salsa Add a T of low fat sour cream add an oz of skim motzerella cheese
Pop in the microwave for like oooo 1 minute(till beans warm and cheese melts) mmmmm yummy and lots of protein.
I also do almonds they are among the best of the nuts for a healthy balance.
For really heavy work load weeks I keep Nectar protein powder on hand. It's really easy to drink O and I also boil eggs and keep several in a container in the fridge for (TOM) I only eat the whites but they are loaded with protein.
I have the South Beach Cook Book at home and there is a recipe in there for these eggs and turkey bacon cups that you bake in muffin tins - you can make them up ahead of time and freeze them and then just pop one or two in the microwave for a snack. It's kind of like a little muffin sized quiche with no crust but very tasty! When I get home, I will type up the recipe and post, if you would like!
4 ounces of turkey sausage or bacon 1/2 green pepper, chopped 1/4 onion chopped 5 eggs 1 can sliced mushrooms 1/2 cup reduced fat cheddar cheese.
Pre-heat oven to 350 degrees, coat muffin tins with cooking spray (or use paper baking cups). In a skillet - cook sausage, pepper, and onion for about 5 minutes or until no longer pink. Put in bowl and let cool slightly, then add eggs and mushrooms. Mix well and evenly divide among muffin cups. Sprinkle cheese on top. Bake for 20 minutes. Makes 6 cups.
This sounds so yummy! Thanks. We're cooking today and trying this week!
Oh, and Sabrina....I LOVE your suggestion. I am trying it today!
Thanks again guys. I did get some wasabi peas and the edamame. Can't do cottage cheese since I had an unfortunate run in with some sour milk at one time, and well, I just can't do cottage cheese anymore.
Kerstin, I know that snacks is an issue for me too, here's some suggestions that I know have been mentioned before:
That's all I can think of right now!

Good Luck..
Sabrina, I eat loads of egg whites and I buy them in cartons, which makes them perfectly portable!!
