Pumpkin Soup

Warm up quickly- stay toasty with a pumpkin soup that has 159 calories and more than 100 percent of your daily recommended vitamins A and C per bowl!


1. Heat a 14oz of low-sodium fat-free chicken broth in a saucepan over medium-high heat.


2. Blend a 15oz can of pumpkin puree into the broth with a whisk.


3. Pour 1 cup of OJ into the saucepan and stir for 3 minutes or until warmed through.


4. Add in 1tbsp light sour cream and 1/4tsp of nutmeg and salt, and 1/8tsp of pepper.


5. Spoon into 2 bowls and garnish each with 1tsp of light sour cream and enjoy with a friend!


This is in October's Self Magazine, and although I don't think I've ever had pumpkin soup it sounded so good that I'm intrigued to try it. It's so easy sounding too!
