I had this the other night and it's delicious. Also the bbq sauce makes an excellent "cocktail" sauce for dipping shrimp in.

BBQ Sauce

1 (8-oz) can tomato sauce (no sugar added tomato sauce, contadina is sugar free)
2 TBS white vinegar
2 teaspoons chopped fresh parsley
1 teaspoon Worcestershire sauce
1 teaspoon ground mustard
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/8 teaspoon garlic powder

Combine all ingredients in a resealable plastic containter. Refrigerate until ready to use. Makes 4 (1/4 cup servings)

BBQ Chicken

4 (6-oz) Boneless, skinless chicken breasts
1 teaspoon extra-virgin olive oil
1/2 cup of BBQ sauce above.
Salt and freshly ground black pepper

Heat over to 350 degrees

Season chicken on both sides wiht salt and pepper. Heat oil in a large nonstick skillet over medium-high heat. Add chicken and cook until browned, 2 minutes per side.
Place ckicek in a single layer in an ovenproof baking dish and sppon sauce evenly over the top. Bake until chicken is cooked through and sauce is bubbling. 18 - 20 mins.

Makes 4 servings

200 calories
3.5 grams fat
.5 grams saturated fat
40g protein
2 g carbohydrates
290 mg sodium

Did you try it??? This is from the new south beach 30 min meal cookbook my mom bought me for christmas. I was really impressed with how well the chicken came out, nice and juicy.

I hate it when chicken breasts come out all dry, but this came out so nice and moist!

The turkey parmesan recipe I posted is from the south beach as well, there is also a citrus recipe for mahi mahi that I plan on trying this week and if it comes out well I'll post that also.
