Low Carb Turkey Parmesan

Had this tonight and it was really yummy. Phase one on South Beach doesn’t allow carbs, but in Phase two you can so this would taste good with whole wheat pasta as well. I ate it by itself. I didn’t have shredded mozzarella I just had the fresh mozzarella in the balls (get your mind out of the gutter) found in the cheese section. I just sliced them up to lay on top.

Turkey Parmesan

2 cups low-sugar pasta sauce (classico makes a good sugar free pasta sauce)
½ cup pine nuts, coarsely chopped
1 ounce freshly grated parmesan cheese (1/4 cup)
½ tsp dried Italian seasoning
1 pound turkey cutlets, about 1/3 inch think
2 tsp extra-virgin olive oil
2 ounces shredded part-skim mozzarella cheese (1/2 cup)
Salt and freshly ground pepper

Heat oven to broil. Bring sauce to low simmer in a small saucepan over medium-low heat. Remove from heat and cover to keep warm. Stir together pine nuts. Parmesan. And Italian seasoning a wide shallow dish. Season turkey on both sides with salt and pepper, then dredge both sides in the nut mixture, pressing to adhere.

Heat oil in large nonstick skillet over medium-low heat. Add turkey and cook until coating is golden brown and juices run clear, about 4 mins per side. If nuts brown too quickly, reduce heat.

Place turkey in a baking pan, top evenly with mozzarella, and broil until cheese melts, about 30 seconds.

Spoon ½ cup of warm sauce on eat plate and top each with a piece of turkey.

Makes 4 servings.

Per Serving: 380 calories, 21 g fat, 4 g saturated fat, 39 g protein, 10 g carbs, 3 g fiber, 650 mg sodium

This sounds sort of similar to the pistachio chicken I had last week, and I LOVE pine nuts!! Thanks for passing the recipe along, and ♣Good Luck♣ with phase 2 of SBD!

Thanks....I'm still in Phase one, I have one more week and then I can move on. 1st week down 8 lbs and now I'm heading into second week of PHase one. Hopefully this week will go faster. I'm having my period this week so I'm a little concerned.
