Healthy meal/snack ideas???

I am having a hard time coming up with a variety of low fat, healthy foods. I do 100% of the cooking for my family and can't seem to figure out a meal all of us can eat. I don't mind making myself a seperate meal but have run out of ideas!!! The frozen meals(Lean Cusine, etc...) are out for me and I have limits to how much salad I can consume in one week!!! Any recipes or ideas are appreciated. Thanks!!

Thanks for the ideas. I have been recording what I eat using fitday.com and maybe being to hard on myself. I know that it's healthy to take in 1500-2000 calories a day but almost feel guilty when I do. I am trying to keep them low fat calories. By looking back over my intake the biggest downfall seems to be salad dressing :-( but I just can't take plain lettuce!! Thanks again for the ideas!!
