SKINNY DINNERS

I found a new recipe and wanted to share it. I added some side dishes to make it a meal. It's what I call a skinny dinner. Please post your own skinny dinner that you can make this week or next. Make it something different, special and quick - as we all can make boneless chicken breast, veggies, and rice. Lets have an adventure for dinners the next couple of

I am sure that you can just leave out the cheese...or throw in whatever you normally would put on a turkey sandwhich.

They do look good, I might try it with some other cheese, not too keen on the ol' blue cheese!!


You know one of my favorite 'skinny dinners' is a soup dinner. I can often squeeze so many veggies into it that I'd be good for a couple of days, lol!


IG's Veggies Soup


1 can low sodium chicken broth
1 chicken breast (cooked and diced)
1 ready made 'tray' of cut veggies (broccoli, cauliflower, carrots and squash)
1 diced onion
2 medium potatoes
1 bay leaf


'Throw' all ingredients into a pot and cook veggies. When they're cooked add some of the chicken, then blend in the blender (or not!!) add in remainder of chicken.
*Don't forget to remove the bay leaf, lol*


I season my soup with LOTS of white pepper!!


I usually have a slice or two of bread alongside it. YUM!
