15 Minute Black Bean Salad


This salad recipe we created for you, is very flavorful, full of nutrition and protein, and can be made in just 15 minutes. In addition to that, it will also keep for days in your refrigerator making it a great dish to have on hand for a healthy, instant meal.






15 Minute Black Bean Salad
Prep and Cook Time: 15 minutes

Ingredients:


  • 1 15 oz can black beans, drained and rinsed
  • 1 cup frozen corn, thawed
  • 8 cherry tomatoes, quartered (gently squeeze out seeds)
  • ½ cup minced onion
  • 2 medium cloves garlic, pressed
  • ½ cup diced red bell pepper
  • 2 TBS pumpkin seeds coarsely chopped
  • 1/4 cup chopped fresh cilantro
  • 2 TBS extra virgin olive oil
  • 3 TBS fresh lemon juice
  • salt and black pepper to taste
  • * optional: dandelion greens

Directions:


  1. Mix all ingredients together and serve. This salad will keep for a couple of days and gets more flavorful if you let it marinate in the refrigerator for awhile.

    Serves 4

I do like corn and would eat it w/o all the benefits...but for some reason, if I eat corn 2 or 3 days in a row - my tummy gets very upset with me. Not sure why...

I LOVE corn. Lately, K and I have been cooking up corn on the cob. Okay, it's healthy until we lather on the butter. Thank god my cholesterol is low. I love butter. lol. Let's hope my arteries aren't all clogged up because of it. Ugh. Why can't the fattening foods be good for you?
