Someone was asking me about Bison, and because I'm now such a huge fan, and because it is a health alternative to beef, I thought I'd make a whole post of it.


I get my bison roasts from the Farmer's Market, and I usually pick up a little roast for about $8-$12 and it does for Matt and I and then one or two servings leftover.


Bison cooks much quicker than regular meet - for a small roast (usually a Sirloin roast) I only cook it for 30 minutes for a medium rare.


I mix up a bit of red wine, dijon mustard, coarsly ground black pepper, and some herbes (I like using herbes de provence for roasts). Then I mix that up, lightly coat the roast all over with the mixture, and pop it in the oven at 350 for about 1/2 hour.


We've also had bison sausage to eat cold and it is very good. The meat tastes a little stronger, but the texture is fabulous in the roasts.

Thanks for the link! It sounds really good and I definately going to look for some. It's not common around here so I am going to have to look around for it. It sounds really healthy and the recipe you posted sounds good. I love food. I should have gone into cooking as a career because food facinates me. It's definately a weakness, I can't get into the whole "eat to live don't live to eat" thing because truly I enjoy food too much. I am always looking for new recipes and new foods. Is farmers market a chain grocery store or do you mean there is actually a market that the farmers around you sell their goods at. I live in a bo-dunk town and we have 3 farmers markets that sell produce from area farms.

I love to cook too! I adore finding new recipes and trying them out! The Farmer's Market is exactly that, a market where farmers and other producers can sell their products, all sorts of crafts and cool different foods there.


IG, you were asking about texture, I find that if you get the sirloin roast, or top sirloin roast the texture is a bit finer than beef, not quite as grainy. The taste is very similar to beef, maybe a bit stronger. I tried a rib roast, and it wasn't nearly as good, plus I overcooked it a bit, so it was too dry.

They are actually starting to sell ostrich meat in our grocery store so I can imagine that buffalo/bison isn't far off. My parents have eaten buffalo and they said it was delicious, they had it in steak form.

We actually saw some ostrich and elk, but decided to go with the bison again this weekend. I'd be curious to try Ostrich though!

My friend ate ostrich before and said it was fine, she said it tasted like chicken. LOL

Figures it would taste like Chicken! LOL I'm going to check out some Elk this weekend at the Farmer's Market. How do you prepare it?

You cook Elk just like any other red meat, although don't be suprised when you cut into it - it actually looks more white, like pork.

Okay, that's just strange. I wonder if my local market sells anything like that. Or even the more "organic" type places. I'll have to check it out. I'm not a big meat eater (unless it's burgers) anyways, but I'm always game. hehehe. game. :P

Yes, I'm delirious. I'm so tired. BTW, what do you mean by, "grainy" tasting?
