Confused about my weight loss progress

I started my weight loss journey on May 21. Since then I've lost 12 pounds and although my caloric intake has remained steady at 1450-1500 calories, I weighed myself this morning and am still at 207, the same weight from Sunday.
I am going to weigh myself this coming Sunday because the same thing happened last Thursday when I weighed myself and it showed me at 210, the same weight from the week prior. Then, when I weighed myself last Sunday to see if any weight had budged (last week was also my menstrual week) I was down to 207. I'm STILL 207.
My normally scheduled weigh-in date was every 7 days on a Thursday morning. Maybe I should change that permanently to Sunday? Why do I not seem to lose weight from Thursday to Thursday, but show a marked drop from Thursday to Sunday?
I have been so incredibly diligent with this and have ensured I eat every morsel of food that is nutritious and fills my daily quota. I do not allow myself to go under that calorie limit under any circumstances (other than if I were ill). I cannot see how this is physiologically possible, and I know I am not retaining water this week because my ring is loose. Ughhh, I know it was a positive thing for me to step on the scale and I do believe it is very important to my weight loss goals - but I am now driving myself nuts with worry that if I step on the scale, it will show me as plateaued or even gained.
Can I get a fresh perspective from someone?

I know about the "too few calorie slowdown". I have tried to mainly eat healthy, like oatmeal with apples and walnuts for breakfast, homemade veggie soup for lunch, and a sensible dinner. Could I be going wrong by eating too much at dinner as opposed to other times? That is when I usually cook for my "junk food junkie" husband. I eat a smaller portion of what he eats, double the veggies and half the carbs or less. I grew up eating healthy. I am now trying way more cardio and less weight training. I heard somewhere that after a baby you should lose the weight through more cardio, then add muscle. I know muscle burns more calories, but right now am am just getting so annoyed. Does anyone recommend Weight Watchers? I am not trying to return to my high school weight, but I am aiming for about 140-145 lbs. I also have the problem that I have really bad knees. I can only do low-impact cardio that doesn't jolt my knees. I tried Yoga Booty Ballet for a while, and it was awesome, but my knees were hurting so much that I could hardly walk, and sometimes they would just give out on me. I know I am rambling and all over the place with this. Sorry!!
I do have a question for Miranda, and that is about where the calories come from. I don't starve then eat a snickers bar or anything, but I CANNOT give up carbs. I tried, it was like hell. I want to lose weight, but a total lifestyle change seems unrealistic in that I know I can't keep it up forever. Any suggestions?

I'm not sure I understand what you mean about where the calories come from.
You will never hear me say "cut out the carbs" that's for sure! I happen to love those snickers bars! LOL
And I will say that doubling up on veggies is probably a great idea, but of course as veggies are all carbs, your carbs will end up being higher too! So don't be too tied to a low carb diet if the veggie thing is working for you.
Your body is going to tell you when you're treating it right - you will sleep better, have more energy, want to eat less, and your skin will look better, and it might be with 75% carbs, and that might be with only 40% carbs for others.
The other thing to watch is your fibre intake. If you are taking in 60% carbs, but only getting 5 grams of fibre, you are eating low quality carbs and that is generally what is going to make us pack on the pounds. If you are eating eating 60% carbs and getting 20-30 grams of fibre then you are taking in good quality carbs (whole grains, vegetables, etc.) and you're getting a good bang for your
blondie, I feel your pain! I really thought something must be wrong with me! I tried everything too! Islandgirl told me to go to fitday.com. Have you been there? It calculates EVERYTHING for you. It was eye opening! Keep in mind I just started it today...lol. But today was an average day for me so I can see what my problem is. I dont eat enough of the right foods so I dont have enough energy to get myself motivated like I should. Then on top of that Im really only burning about 700 more calories a day than I eat. If I have a day when I want a bowl of ice cream Im going to blow the whole deal! I weigh 155 right now. I weighed 118 when I got preggers 15 yrs ago. I would just like to get to 125. I've not heard about that diet, but if you are experiencing other symptoms you may want to check with your doctor to rule out any medical reasons. Things like PCOS, or thyroid problems can also contribute to fatigue and weight gain.
Great job with the snacks - I'm the same way and one thing that I love is those little pudding cups! They are delicious - and all around 60 to 100 calories depending on which ones you get.
