On the list of things to do for July - eating salsa was somewhere on there!
So instead of simply digging into some chips and salsa, why not try some of these fruit based recipes to go on as a side to some summer meals ... ?
Island Salsa - this one has loads of different fruits and some spicy kick

There's a great salsa at Target - pineapple and peach by Archer Farms. It is sooooo good on chips, or even on a wrap sandwich. Yum...looooove salsa.
Time for the kids to take mom for a walk - lol.

I have another one for you...
1 large green pepper, finely diced
1 large yellow pepper, finely diced
1 large red pepper, finely diced
2 cloves garlic, minced
1-2 jalapenos, minced
1 can black beans, drained
1 can white corn, drained
1 can diced tomatoes in jalapeno sauce, drained
1 tsp fresh cilantro
1 tsp fresh lime juice
4 tbls red wine vinegar
1/4 cup olive oil
1 tsp salt
1/2 tsp pepper
Mix together, cover and refrigerate for 1-2 hours.
This is sooo good. I plan to make it for a barbeque next weekend.

That sounds very similar to a black bean salad recipe I have - it IS yummy!!!
