Actually, I think your itinerary sounds pretty good! I think you might have to play the EMH by heart, meaning you'll need to see how it's going, then adjust accordingly.

Just a note about MGM. It is a lot of shows. There isn't a lot of "action" for little kids. The 2 main things there for really young children are Playhouse Disney and the Honey I Shrunk the Kids playground. Your 5 year olds will probably like the Little Mermaid show, and if they're girls, Beauty and the Beast. If they're boys (and girls, too), they will probably like Indiana Jones. My point is that the first time we went to MGM with kids was when ds turned 4 and dd wasn't quite 2. We stayed about an hour and left. They just had no desire to stand in line, then sit still for show after show.

I think with your kids' ages, you'll want to spend the majority of time in MK. It looks like you've planned for a lot of that. I would follow their cue, and not stress about what "I" thought we had to do! I used to be terrible about that, but now I've learned to be more flexible. We've skipped many ADRs because we didn't want to stop what we were doing.

With the age of your kids, your tickets and dh not being a water park person, I'd stick to the pool. There's enough to see and do at WDW that paying extra for the water park when you have a reluctant adult and a toddler who would be limited on what they could do isn't my idea of a good time.
